Immune Boosting Chicken Soup

In my last post I discussed ways to boost your immune system and stay healthy this winter.

Here’s a delicious recipe that you can also use to keep your immune system well nourished.

IMMUNE BOOSTING CHICKEN SOUP

Makes 4 serves

Ingredients

1 Tbsp olive oil

1 onion, diced

3 stalks of lemongrass (outer layers removed), diced

2 cloves garlic, minced

4 Tbsp ginger. grated

750g chicken thighs

2 tomatoes, diced

5 cups organic chicken stock/broth (natural, unsalted) or water

1 Tbsp turmeric

1 Tbsp mild curry powder

1½ Tbsp Harvest Pantry Thai Inspired Soup Seasoning or Rapunzel vegetable bouillon

Juice of 1 lime

Raw sea salt (to taste)

2 stalks celery, diced

2 carrots. peeled and diced

2 kaffir lime leaves

To serve

2 zucchinis, spiralised (zoodles) or konjac noodles

Large handful fresh coriander leaves (optional)

Dried chili flakes (optional)

Extra salt and black pepper (if needed)

How to make

1. Over a medium heat, add the olive oil into a frypan.

2. Add the onion, lemongrass, garlic and ginger and cook until soft and fragrant.

3. Add the chicken thighs and cook for about 2 minutes on each side.

4. Transfer into the slow cooker with the rest of the ingredients and mix well.

5. Cook on low for 8 hours.

To serve

Serve straight out of the slow cooker into bowls on top of the zoodles or konjac noodles.

Top with coriander and chilli flakes to taste.
