Healthy Ginger Sticky Date Puddings

This is an easy-to-make, crowd-pleasing dessert for Christmas Day or any other celebratory occasion. This dessert is moist and delicious and is suitable for those in Stage 6 of the Miraculoss programme or beyond.

If you’ve been following our recommended low-sugar food plan for a while, this may be a little sweeter than you are used to, but your non-Miraculoss friends and family will love it. You can easily reduce the sweetness by leaving out the whole date in some (or all) of the puddings.  

Ingredients

1 packet of Harvest Pantry Cinnamon Banana Bread Mix

4 eggs

250g dates – diced

12 whole dates

1 C hot water

¼ C milk

4 Tbsp butter or coconut oil – melted

3 Tbsp ground ginger

Method

Preheat oven to 170 °C

Generously grease a 12 cup nonstick or silicone muffin or friand pan, with butter or coconut oil. You may need to line the cups with baking paper if your tray is not new.

Soak diced dates in 1 the hot water for 10-15 mins

Lightly whisk the eggs, milk and melted butter together. 

Empty the Banana Bread Mix into a mixing bowl and remove the silica sachet. Add ground ginger and stir well to combine.

Add the wet ingredients (including dates)and stir well. 

Spoon the mixture evenly into muffin/friand cups. 

Insert 1 whole date into the center of each pudding ensuring the mixture covers the date. Bake for 25-30 minutes until golden and the edge of the pudding is pulling away from the tin, and an inserted skewer comes out clean. 

Cool on a wire rack and store in an airtight container in the fridge for up to 5 days (or freeze for longer storage). 

Serve warm with fresh cream. 

To reheat:

Remove from the fridge a few hours before serving, and then warm through in a covered ovenproof dish at 170 °C for approximately 12 minutes.
