How To Make Low-Carb Crepes,Wraps & Pikelets

Keto crepes with smoked salmon and rocket salad

I’d like to share our very easy recipe for keto crepes/wraps, pikelets or blinis using our Coconut & Chia Keto Scone Mixes.

There are two delicious Keto Scone Mixes in the Harvest Pantry range (savoury and plain), but their uses don’t stop there!

These mixes are so versatile and can be used to make wonderful canapes topped with cream cheese, salmon, cherry tomatoes, chutneys, pickles etc, or as crepes (warm or cold) filled with your faves!

Here’s the recipe.


2 eggs, well beaten

2 tsp butter or coconut oil, melted

¼ C milk

¼ C water

40g Harvest Pantry Coconut & Chia Keto Scone Mix (either palin or savoury – your choice)


Combine ingredients in a bowl and mix well.

Set aside for 15 minutes and then stir the batter again (consistency of lightly whipped cream). 

Heat a frying pan over low-medium heat and melt a tablespoon of butter.

Using a dessert spoon for pikelets or a teaspoon for blinis, drop spoonfuls of batter onto the

pan. For crepes, pour about ¼ C of mixture onto the pan.

When the centre begins to bubble and the edges begin to brown, flip with a spatula.

Cook briefly on the other and serve. Repeat, adding more butter as needed until all the batter is used.

Makes approximately 30 blinis, 12 pikelets or 4 crepes for you to enjoy with your favourite topping/filling.
